My Recipes: The Simple Series, Mushroom Beef Patties

Today kicks off a round of easy peesy recipe posts that I want to share with everyone to inspire you to whip up a homemade meal in under 30 minutes. If you think I sound like Rachael Ray, you're right! I adore her cooking, her books, her magazine and her show and I think she's got such a bright idea about making cooking more accessible to the average Jane and John.

I always remember family dinner times growing up and I think it's such an important part of our day. My husband and I eat dinner together every night. Sometimes it's in front of the TV and other times it's at the kitchen table, but we always sit down and eat together. And I pride myself on being able to create tasty meals each evening, whether it's a brand new recipe I felt like tackling or a simple grilled cheese and soup combo. I enjoy food, I love good food and I think eating with the ones you love is the best.

Lately, I've embarked on various new recipes (like spice-rubbed salmon or spaghetti squash with homemade marinara), some of which we've loved and others that didn't make the cut. So before I went to the grocery store for our weekly list of food and supplies on Monday, the husband politely asked if I could make more of my "regular" meals this week. I was ready for some reliable and yummy foods myself, and it's so stress-free to get in the kitchen and create a dish that you know forwards and backwards and that comes out delicious every time! Of course I humored him with a lineup of some of his favorites, like today's recipe post: mushroom beef patties with rosemary potatoes and steamed veggies. It's so easy you'll be eating away in no time!

1 lb. ground beef (I use organic, any type works fine)
1 can Cream of Mushroom soup
Freshly ground salt & pepper
Lawry's seasoning salt
Garlic salt
Worcestershire sauce
Minced garlic
Dried rosemary
Pepperjack cheese
Fresh veggies to steam (I chose broccoli and cauliflower)
3-5 red potatoes, sliced

In a large mixing bowl, combine your ground beef, a few douses of Worcestershire, a liberal sprinkling of Lawry's seasoning salt, a tablespoon of garlic and some fresh cracked pepper. I used my hands to mush and mix the ingredients, any way you prefer is fine, just be sure it's all thoroughly combined. Form 4-5 small individual patties and place in a heated non-stick skillet, no oil needed. Cook over medium-high for several minutes, until the edges of the patties begin to turn brown and creep toward the center. Then it's time to flip! After flipping the patties, pour the entire can of Cream of Mushroom over them, distributing evenly. Cover and cook a few more minutes, until the meat is brown through the center.

Meanwhile, I steamed some rosemary potatoes in my microwave steamer. I sliced the potatoes and placed them on the steamer, then sprinkled liberally with garlic salt and some rosemary. Four minutes in the microwave and they were perfectly tender! I also steamed some cauliflower and garlic, then topped it with some pepper jack cheese.

That's it! You've got a healthy, wholesome, hearty meal (say that three times fast) that took you less than 30 minutes to prepare and cook.
