My Recipes: Panko breaded tilapia

Hi friends!

Are you ready for a super duper easy recipe?

I mean, this one is killer simple.

Not long ago, I won a giveaway over at Homemade by Holman and she sent me a stellar cookbook and a box of these lemon pepper Panko bread crumbs by Progresso.


 Great with fish, I paired the bread crumbs with tilapia for a quick, tasty dinner.


All you need, literally, are the bread crumbs, some flour and eggs.

Heat a large skillet on high heat with some oil or organic coconut oil, like I use. Then dip the fish into the flour, then the egg then the bread crumbs. Place fish fillets into the skillet and cook 2-4 minutes on each side, depending on the thickness of the fish. (I usually wait to flip until I can see the opaque white color seeping up the edges of the fish.)

That's it! Seriously!

You don't need other seasonings because the bread crumbs are all good to go. I added a little extra zest with a squeeze of fresh lemon juice before serving, the husband loved it. We paired our tilapia with some steamed corn on the cob and red potatoes.



Speaking of good things to eat, I stopped in at La Madeleine yesterday for lunch and got their Mediterranean flatbread... so yum!


Then for Valentine's Day - albeit my least favorite of the year - I did participate by picking up some delicious red velvet cake from my friend's bakery, Ooh La La Dessert Boutique. If you live in or near Katy, TX, I highly recommend it!

  2. La Madeline is one of my favorite places. Can't wait to visit, you will have to take me to oolala dessert boutique. I will have to have you teach me how to cook fish - love trying it when I'm there but not sure about doing it on my own. It would be healthy for us to eat fish on a weekly basis.
